Grapes: Old black Grenache vines.
Terroir: Commune of RASTEAU, the vineyards are located at an altitude of 300 m. Land of hillsides with stony clay-limestone soils and very steep. Cuvée parcel.
Viticulture: The Grenaches are in a cup. These are the oldest vines on the estate, planted in 1924. The soil is worked in its entirety with respect for the environment and the plant.
Vinification: Manual harvests. Egrappage and treading. 28 to 35 days. Daily pigs during alcoholic fermentation as well as two to three offloads. Grenache is raised in concrete vats for 9 months to keep its fruit.
Production: 5,000 bottles for exceptional years.
Tasting notes: Pretty deep red dress with chinese ink reflections. Fine and elegant nose of red fruits, liquorice and prune from Agen. The mouth is full with melted tannins, we discover aromas of black cherries associated with gingerbread. The elegance and velvet of old black Grenache, fruity and structured.
Accords: Beef rib with morel sauce, thrush skewers, cheeses with washed crusts, exquisite chocolate.
