Grape: Old Syrah vines.
Terroir: The plot is located at an altitude of 150 m, on the commune of ROAIX. Land of hillsides with low-yielding stony clay-limestone soils.
Viticulture: The Syrah (40 years) are on wires. The soil is worked in its entirety with respect for the environment and the plant.
Vinification: Manual harvest. Egrappage and treading. 28 to 35 days. Daily pigs during alcoholic fermentation as well as two to three offloads. Syrah is raised in oak barrels (225l) for 9 months.
Annual production: 5,000 bottles in good years.
Tasting notes: Superb deep red dress with chinese ink reflections. We discover an elegant nose of cherry with brandy, eucalyptus and old armagnac. The mouth is full and pleasant, all round. Aromas of cherry jam, combined with liquorice and white pepper.
Accords: Red meat, lamb tagine with spices, duck breast with honey, game.
