Grapes: 80% Black Grenache and 20% Syrah.
Terroir: Commune of RASTEAU, the vineyards are located at an altitude of 250 m. Land of hillsides with stony clay-limestone soils and very steep.
Viticulture: Grenaches are in cups (vines over 60 years old) and Syrah on wire (40 years). The soil is worked in its entirety with respect for the environment and the plant.
Vinification: Manual harvests. Egrappage and treading. 28 to 35 days. Daily pigs during alcoholic fermentation as well as two to three offloads. The wines are aged for one year, in oak barrels for the Syrah (225 l barrels) and in concrete vats for Grenache and then assembled and bottled.
Annual production: 30,000 bottles.
Tasting notes: The jewel of the estate. Pretty cherry red dress with purple highlights. We discover an elegant nose of black fruit confit and leather. The mouth is ample, structured and pleasant, on sweetness where we discover black fruits associated with spices.
Accords: Beef rib with morels, veal bavette with shallot, blue Of the Causses.
