Climat & terroir…
Our Les Clos is a single vineyard of 0,67 hectare planted in 1964 by André Tremblay, Joëlle Bouchard’s father. It dominates the village of Chablis. The exposition is South. The soil is made of deep white clays and Kimmeridgian
limestone.
Vinification & ageing…
Very low yields (20 to 30 hl/ha). Hand harvested. Fermentation in stainless steel tank and ageing 100% in French oak (old barrels of 350 liters) on fine lees during a minimum of 12 months. Bottling minimum 15 months after the
harvest.

Just be patient ! Les Clos shows an incredible concentration, needing time (5 to 10 years and even much more on the best vintages) to express its exceptional potential. This racy and long wine is perfect with lobster, caviar, noble
dishes with truffles, etc…
